5 Recipes Perfect For a Toaster Oven

Cooking a family meal, desert or breakfast can be easily done with a modern toaster oven. It makes meal times quick and convenient. There are lots of ovens available, but with a little research you can find the appliance that you consider to be the best toaster oven for the job.

The following recipes are all easy to prepare and very simple to cook. Give them a try, you won’t be disappointed.

Lazy Lasagne

This is a very simple dish to make, simply follow the instructions and you will have one of the best lasagne dishes you have ever tried.

Ingredients:

  • 6 sliced zucchini (about 1 3/4 lbs.)
  • 1/2 lb. ground beef
  • 1 sm. clove garlic, minced
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. salt
  • 1/4 tsp. dried oregano leaves
  • 1/4 tsp. dried basil leaves
  • 1 c. sm. curd cottage cheese
  • 1 egg, beaten
  • 1 tbsp. parsley flakes
  • 1/4 c. dry bread crumbs
  • 1 c. shredded mozzarella cheese (4 oz.)

Method: 

Cook the zucchini in boiling water in a saucepan until tender-crisp, about 5 minutes, then drain. Cook the ground beef and garlic in a skillet until the beef is browned, about 5 minutes should do the trick. Stir the tomato sauce, salt, oregano and basil into the beef. Stir together the cottage cheese, egg and parsley.

Layer the dish as follows: place half of the zucchini in a greased 8 inch square pan. Sprinkle with half of the bread crumbs. Spread with half of the cottage cheese mixture, then with half of the beef mixture and half of the mozzarella cheese. Repeat layers, but reserve the remaining Mozzarella cheese.

Bake at 350 degrees for 25 minutes. Sprinkle with the remaining mozzarella cheese.

Return to the toaster-oven just long enough to melt the cheese, about 3 minutes should be enough.

This dish is delicious and will serve 4-5 happy diners.

Easy Cook Meatloaf

Meatloaf is a family favorite, why not try it in your toaster oven. Quick, simple and delicious.

Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 small green/red pepper, finely chopped
  • 1 egg
  • 1 slice bread
  • Milk
  • Italian herbs, any kind
  • 5 tbsp. spaghetti or pizza sauce
  • Preheat toaster oven to 400°F.

Method:

On a small plate or in a bowl, soak a slice of bread in milk.

In a medium bowl, spread the beef evenly. Cover with onion, pepper and herbs. Tear the bread slice into small pieces and add to the bowl.

Knead like bread dough (or just mash it all together). Cover a mini loaf pan in the  sauce (saving 2 tablespoons for topping). Put a few drops of water in the pan. Form the beef into a loaf to fit the pan. Cover with foil.

Bake at 400°F for approximately 1 hour. Remove foil, spread 2 tablespoons of the sauce on top, return to toaster oven and bake for another 15 minutes.

Crescent Pizza Rolls

This is a great dish for the whole family to enjoy. It is very quick to prepare and cook. You can serve fresh, hot and homemade pizza rolls within 20 minutes, from preparation to serving.

Ingredients:

  • 1 (1 oz.) refrigerated crescent roll
  • 2 tbsp. tomato sauce
  • 2 tbsp. finely chopped mushrooms
  • 3/4 oz. shredded mozzarella cheese
  • 1 tsp. grated parmesan cheese
  • 1/4 tsp. dried basil

Method:

Preheat the toaster oven to 350 degrees. Unroll the dough on to your work surface. Spread the dough evenly with tomato sauce. Sprinkle with mushrooms, cheeses and basil. Roll triangle from the shortest side to enclose filling. Place on a toaster oven baking pan. Bake for 8-10 minutes until golden. This is a really healthy choice of pizza for a family, each pizza roll only contains 174 calories, 9 g. fat, 14 mg. cholesterol and 546 mg. sodium.

Turkey Chimichangas

Why go to an expensive Mexican restaurant. This dish will not only save you time, but it is a healthy and cost effective way of feeding the family.

Ingredients:

  • 1 pound thickly sliced smoked turkey from deli counter
  • 1 tablespoon chili powder
  • 2 cups shredded slaw cabbage
  • 1 to 2 chipotles in adobo sauce
  • 1 cup tomato sauce
  • 3 scallions (chopped)
  • Salt and pepper
  • 4 (12-inch) flour tortillas
  • 1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar
    or pepper jack cheese
  • 2 tablespoons vegetable or olive oil
  • 1 cup sour cream
  • 2 tablespoons chopped cilantro leaves or flat-leaf parsley
  • 1 vine ripe orange or yellow tomato, seeded and finely chopped 

Directions:

Preheat your toaster oven to 400 degrees F or high. Place the turkey in a bowl and season with chili powder. Add the shredded cabbage, chipotles in adobo, tomato sauce and scallions. Toss the filling to combine and season with salt and pepper. Place the tortillas in a kitchen towel and set in the microwave. Cook on high for 1 minute.

Place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat the process to make 4 large, stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with some oil and bake until deep golden brown all over, around 15 to 17 minutes should be perfect. Top with some sour cream, cilantro or parsley and chopped orange or yellow tomato as a garnish.

Apple Crisp 

Who doesn’t like a sweet treat every now and again. This healthy option will leave children and adults begging for more.

Ingredients: 

  • 2 apples
  • 1 tbsp. flour
  • 1 heaping tbsp. brown sugar
  • 1 tsp. ground cinnamon
  • dash of salt
  • 2-4 tsp. water
  • 1 tbsp. butter, cut in sm. Pieces

Method: 

Peel and core the apples, then slice them directly onto a toaster oven baking tray or cookie sheet. In small bowl, blend the flour, brown sugar, cinnamon and salt. Scatter the flour mixture over the apples. Sprinkle water over all ingredients (use more water than called for if apples are not very juicy). Space out pieces of butter over top of the dish. Place the tray in the toaster oven and set at 375 degrees. Bake for 30 minutes. Makes 2 servings. Nutrients (without topping) 171 calories, 0.87 grams protein, 6.4 grams fat, 15.5 mg cholesterol, 3.1 grams fibre, 106 mg sodium.
